Bill Taylor is a Sacramento native and a McClatchy graduate. Opening Iron in his old neighborhood, Land Park, has fulfilled a long-time dream to become part of the landscape of the city. Influenced by such institutions as Vic’s and Bob’s BBQ, fond memories, and a desire to contribute to the wonderful city he has called home for so many years is his inspiration.
Bill has been an avid cook for 40 years. He’s a meat and potatoes kind of guy and he loves a great steak. His portions are generous and he’s been known to convert the most avid vegetarian with the first bite. He has a commitment to quality and value and most of all he aims to please. He will feed you like you’re family.
Bill Taylor began cooking in Hawaii in 1966, and hasn’t stopped. After attaining a BA in Economics from UCLA, an MBA from USC, working as a CPA for a Big Eight, and then a VP for a real estate division of Avon, Bill decided that what he really wanted to do was make burgers. He opened the first in 1991, and another in Carmichael in 2004. With the acquisition of the former Fuji property on Broadway he is applying the same high value concept to a full service restaurant and bar, with a focus on the highest quality and service at the best possible prices.
The complete upgrade of the former Fuji Restaurant property is sensitive to the classic Japanese architecture, designed by Ed Cato. Bill has retained many fine details while bringing a contemporary ambience, with a focus on simplicity, texture and comfort. For example, Bill designed the custom booths after his living room couch. All the stone work is custom, as are the end-cut wood floors and bar and table tops.
